Cook sugar and water together until dissolved, then add cardamom powder, orange color, and lemon juice. Simmer for 1 to 2 minutes and keep the syrup warm.
Mix flour, cornflour, ghee, yogurt, orange color, and water until smooth. Beat by hand for 5 to 6 minutes, then stir in baking soda and transfer to a squeeze bottle or piping bag.
Heat oil over medium-high heat and pipe the batter into spirals directly into the oil. Fry until the jalebis are crisp and evenly golden on both sides.
Dip the hot jalebis in warm syrup for 1 to 2 minutes, then remove and shake off the excess. Garnish with pistachios and serve warm.
Jalebi is a festive favorite made by frying light spirals of batter until crisp, then dipping them in warm spiced syrup.
Serve jalebi hot on its own or pair it with a cup of chai for a classic sweet treat.
Test one small jalebi first to check the oil temperature and batter flow before frying the full batch.
