Mix wheat flour with salt and oil, then add water gradually and knead into a soft smooth dough. Cover and let it rest for 15 minutes.
Mash the boiled potatoes well, then mix in red chili flakes, salt, carom seeds, crushed coriander, crushed cumin, chopped green chili, and chopped coriander.
Roll one dough ball into a small disc and set it aside. Roll a second dough ball slightly, place the potato filling in the center, cover with the first disc, seal the edges, and roll gently into a round paratha.
Cook the paratha on a hot griddle over medium heat, brushing ghee on both sides, until golden brown and crisp.
Serve the aloo parata hot with yogurt, butter, or pickles.
