Prepare the pans: Preheat the oven to 175°C / 350°F. Grease and line two 8-inch round cake pans with parchment paper.
Mix the dry ingredients: Combine flour, cocoa powder, sugar, baking powder, baking soda, and salt in a large bowl.
Add the wet ingredients: Add eggs, milk, oil, and vanilla. Beat until the batter is smooth and evenly combined.
Add hot coffee: Slowly mix in the hot coffee. The batter will become fairly thin—this helps produce a soft and moist chocolate cake.
Bake: Divide the batter evenly between the prepared pans. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out with only a few moist crumbs.
Cool: Allow the cakes to cool in their pans for about 10 minutes before transferring them to a wire rack. Cool completely before assembling.
Make the ganache: Heat the heavy cream until steaming but not boiling. Pour it over the chopped chocolate and leave for 2–3 minutes. Add butter and stir until completely smooth and glossy.
Assemble: Place one cake layer on a serving plate. Spread a generous layer of ganache over it, then place the second cake layer on top.
Finish: Cover the top and sides with the remaining ganache. Decorate with chocolate curls, berries, or a light dusting of cocoa powder.
Set and serve: Allow the ganache to set for approximately 20–30 minutes before slicing.
