Instructions

Make the Batter
Combine chickpea flour, rice flour, and all spices. Gradually add water to make a thick, smooth batter.

Heat the Oil
Heat oil in a deep pan to 350°F (175°C). Test with a drop of batter.

Dip & Fry
Dip vegetable slices in batter. Fry in batches until golden and crispy, about 3-4 minutes.

Drain & Serve
Remove with a slotted spoon and drain on paper towels. Serve with mint chutney.

- •Rice flour adds extra crispiness.
- •Don't overcrowd the pan – fry in small batches.
