Spicy Chicken Karahi

Instructions

Heat the Karahi

Heat oil in a karahi or wok over high heat. Add cumin seeds and let them splutter.

Cook the Chicken

Add chicken pieces and fry until lightly browned. Add garlic paste and half the ginger.

Add Tomatoes

Add chopped tomatoes and all the spices. Cook on high heat until tomatoes break down and oil separates.

Finish & Serve

Add green chilies and remaining ginger. Cook for 5 more minutes. Garnish with fresh coriander and serve hot with naan.

Chef's Notes

  • Use bone-in chicken for more flavor.
  • For extra heat, add crushed red pepper at the end.
