Heat 1 tbsp oil in a wok over high heat. Add beaten eggs and scramble quickly. Remove and set aside.

Stir-Fry Vegetables
Add remaining oil. Stir-fry vegetables for 2 minutes.

Add cold rice and toss vigorously for 3-4 minutes.

Return eggs to wok. Add soy sauce and sesame oil. Garnish with green onions.
