Combine lamb with yogurt, ginger-garlic paste, biryani masala, and salt. Marinate for 2 hours.

Cook Lamb
Cook marinated lamb in a heavy pot until 80% done.

Parboil Rice
Boil rice with whole spices until 70% cooked. Drain.

Layer & Dum
Layer rice over lamb. Top with fried onions, saffron milk, herbs, and ghee. Cover and cook on low for 25-30 minutes.

Rest & Serve
Let biryani rest for 10 minutes. Gently mix layers before serving.
