Blanch Spinach

Boil spinach for 2 minutes, then transfer to ice water. Blend with green chilies, ginger, and garlic.

Fry Paneer

Lightly fry paneer cubes until golden. Set aside.

Make the Base

Heat oil, add cumin seeds, then onion. Cook until soft. Add tomato and cook until mushy.

Combine & Serve

Add spinach puree and cook for 5 minutes. Add paneer and cream. Simmer for 5 minutes.

Chef's Notes

  • Blanching keeps the spinach bright green.
  • Add a pinch of sugar to balance the bitterness.
