Preheat the oven to 190 degrees Celsius and line a baking tray with butter paper.
Butter one bread slice and top it with the cheddar cheese slice, mortadella slices, and mozzarella.
Press the center of the second bread slice to create a shallow well, then place it on top of the cheese layer.
Butter the top slice, crack the egg into the center well, and season with black pepper and pink salt. Add a little more mozzarella around the egg.
Bake until golden and cooked through, then finish with fresh coriander and serve hot.
