Cook the whisked eggs in a little oil until set on both sides, then cut the omelet into cubes and set aside.
Heat oil in a wok and stir-fry the capsicum and onion on high heat for about a minute, then remove and keep aside.
In the same wok, heat more oil, add ginger garlic paste and chicken strips, and stir-fry until the chicken changes color.
Add the chili powder, turmeric, black pepper, coriander powder, ketchup, tomato paste, soy sauce, garam masala, cumin, and salt, then cook briefly until the chicken is coated.
Add the tomato strips, sauteed vegetables, and omelet cubes, toss gently for a couple of minutes, and serve hot with rice or naan.
