Mix the chicken with yogurt, ginger and garlic paste, salt, crushed red chili, roasted cumin, and black pepper. Let it rest for 5 to 10 minutes, then cook it in oil until fully done and let it cool completely.
Combine plain flour, wheat flour, salt, and oil. Add warm water gradually and knead into a smooth soft dough, then cover and rest it.
Divide the dough into portions and roll lightly. Spread a little cream cheese, add a portion of cooked chicken, then top with cheddar and mozzarella. Cover with another rolled dough piece and seal the edges.
Heat a tawa over medium heat and cook each paratha with ghee or oil until golden brown and crisp on both sides.
