Cook the beans, carrot, cauliflower, potatoes, peas, and corn briefly in oil, then remove and keep aside.
In the same pan, cook cumin, chopped onions, and ginger garlic paste, then add tomato puree, spices, and yogurt and cook until the oil separates.
Pour in the hot water and simmer the masala until it thickens into a smooth gravy.
Add the stir-fried vegetables back along with cubed onion, capsicum, green chilies, fenugreek, and coriander.
Cover and cook on low heat until the vegetables are tender and well coated, then serve hot.
