Boil water, cook the spinach and dill briefly until wilted, then drain and keep a little of the blanching liquid aside.
Heat oil, fry the onions until soft, then add cumin, ginger-garlic paste, and mutton. Add tomatoes, salt, chili powder, crushed red chilies, turmeric, and water, then cover and cook until the mutton is tender.
Stir the blanched spinach and dill into the mutton and cook for a few minutes until the greens blend into the masala.
Add green chilies, lemon juice, garam masala, and fresh coriander, then cook briefly so the flavors come together.
Serve the palak gosht hot with roti, naan, or plain rice.
