White Sauce Chicken Pasta Ingredients: • Chicken: 1½ chicken breasts, cut into cubes • Butter: 3–4 tbsp (for chicken) + 5–6 tbsp (for sauce) • Garlic: 1 tbsp, chopped • Mushrooms: 7–8, sliced • Capsicum: 1, cut into julienne • All-purpose flour (Maida): 1½ tbsp • Milk: 1½ cups • Cream: ½ packet (around 100 ml) • Cooked pasta: As needed (penne or fettuccine works best) Spices for Chicken: • Salt – to taste • Chili flakes – ½ tsp • Chili powder – ½ tsp • Black pepper – ½ tsp • White pepper – ½ tsp • Oregano – a pinch Spices for Sauce: • Black pepper – 1 tsp • Salt – ½ tsp (adjust to taste) • Paprika powder – ½ tsp • Chili powder – ½ tsp • Oregano – 1 tsp Method: 1. Cook the Chicken: • Heat 3–4 tbsp butter in a pan. • Add chopped garlic and sauté for a few seconds. • Add chicken cubes and cook for 2–3 minutes. • Add the chicken spices (salt, chili flakes, chili powder, black pepper, white pepper, oregano). • Cook until chicken is done and lightly golden. 2. Add Vegetables: • Add sliced mushrooms and capsicum. • Sauté for a few minutes until vegetables are slightly soft. • Remove chicken and vegetables from the pan and set aside. 3. Make the White Sauce: • In the same pan, add 5–6 tbsp butter. • Once melted, add 1½ tbsp maida and cook for a minute (don’t let it brown). • Gradually whisk in 1½ cups milk until smooth. • Add ½ packet cream and mix well. • Add sauce spices (black pepper, salt, paprika, chili powder, oregano). • Cook until the sauce thickens slightly. 4. Combine Everything: • Add cooked pasta to the sauce. • Add the cooked chicken and vegetables back in. • Mix well until everything is coated in the creamy sauce. 5. Serve Hot: Garnish with extra chili flakes or parmesan if desired. This pasta has no cheese !! Which is the best thing about it. Creamy Black Pepper Chicken Steak A juicy, restaurant-style chicken steak served with sautéed vegetables, fries and a rich, creamy black pepper sauce. Fries from @rohab_foods Ingredients For the Chicken Marinade * 4 chicken breast fillets * 1 tsp garlic paste * ½ tsp black pepper * ½ tsp chili flakes * 1 tsp chicken broast masala * 1 tsp oregano * Salt to taste * 1 tsp mustard paste * 1 tbsp olive oil * 1 tbsp butter (for cooking) For the Sautéed Vegetables * ½ bottle gourd, peeled & cubed * ½ carrot, peeled & cubed * 1 tsp olive oil * Pinch of salt * Pinch of black pepper * Pinch of oregano For the Creamy Black Pepper Sauce * 2 tbsp butter * ½ onion, finely chopped * 1 tsp chopped garlic * 1 tsp black pepper * 1 cup chicken stock * 3–4 tbsp cooking cream * 1 tsp mustard paste Method 1. Marinate the Chicken * In a bowl, combine the chicken with garlic paste, black pepper, chili flakes, chicken broast masala, oregano, salt, mustard paste, and olive oil. * Mix well so the chicken is evenly coated. * Let it marinate for 15–20 minutes. 2. Cook the Chicken * Heat 1 tbsp butter in a pan over low to medium heat. * Add the marinated chicken and cook for 6–7 minutes per side, or until golden brown and fully cooked. * Remove from the pan and let it rest while preparing the sauce. 3. Prepare the Sautéed Vegetables * Boil the bottle gourd and carrot for 6–7 minutes, then drain well. * Heat 1 tsp olive oil in a pan. * Add the vegetables along with a pinch of salt, black pepper, and oregano. * Sauté for 3 minutes until lightly golden and flavorful. 4. Make the Creamy Black Pepper Sauce * Melt 2 tbsp butter in the same pan. * Add the chopped onion and cook until soft. * Stir in the chopped garlic and cook for about 30 seconds. * Add the black pepper and mix well. * Pour in the chicken stock and let it simmer for 2–3 minutes. * Stir in the cooking cream and mustard paste. * Cook for another 2–3 minutes, until the sauce becomes smooth and slightly thick.
